I love food. If you look at my Instagram account, you will see a lot of pictures of food creations. Food and I have a love/hate relationship. I have always loved food but I also have always struggled with being overweight. I believe most people deal with overeating or being overweight at some point in their lives.
I have become a student of eating healthy, cooking well and knowing my body. This has been several years in the making but I finally feel like I have found something that works. This is not a magic answer for everyone. My husband and I have made some drastic changes since we were first married. Let’s just say that most meals were carbs and grains when we were first married. Granted, I could didn’t cook well and have learned a lot since way back when (five years ago). We have cut out a lot of grain from our diet since then and have been trying to eat either gluten free or modified Paleo. Modified because I’m from Wisconsin and love my dairy. For my family this works, and we feel a whole lot better! When we eat wheat we get really crabby and if I have too much sugar, my family steers clear because I am not very nice. I have been that way since I was a kid. My mother can tell you stories.
A key to our eating better success has been meal planning. I learned this by watching my mom do this from the time I was five. As a crazy busy wife, mother and full time employee, cooking fresh and healthy isn’t always what I want to do. However, it is necessary to have food for my hungry family. I like to sit down and plan out a week or two of lunches and dinners then post it on the fridge. We buy meat in bulk so if I post the menu, I can see what I need to take out of the freezer. I forgot the other day and almost cried. Yay hormones. Having a menu posted also gives the babysitter an idea of what the kids are eating for the day.
I have found a few great Paleo and gluten free websites that I want to share with you. I turn to these women whenever I need a little inspiration for my menus.
Liz McGraw from Paleo on a Budget has great, simple and cheap good tasting recipes that my family and I love to eat. Liz also has menu plans that I turn to when I can’t figure out what I want to eat during the week. Emily Levenson has some great healthy recipe ideas. We love the healthy fried rice off her site. She also has information about food allergies and sensitivities.
